Summer of Pie {Sunday Snapshot}

If you've read for a while, you know that summer in Texas is not really my favorite season.  But I am trying to be really positive this summer and we have tried to plan a fun (and stress-free summer).

One of the things we are doing is making weekly trips to the library.  This week Kate got a book called Amelia Bedelia's First Apple Pie.  It is a very cute book and after reading it, Kate desperately wanted to bake her own pie (she has helped Dave make pies before).  This led to a great discussion and idea in our family.  We decided it would be the Summer of Pie at our house.  Each week we will make a new pie.  This week, Kate wanted an apple pie (although she called it shoo pie).  So, since Dave is the master pie baker in our house, he assisted Kate.  Really, Dave's pies are SO good that people have suggested he start a business!

Kate was so happy.  She LOVES to cook and bake.  Just loves it.

She even made a little individual one with the leftover dough just as Amelia Bedelia did in the book.

I never even took photos of the finished products after they were baked but they tasted delicious!!!

Harry wants to make key lime pie.  Will wants to make a cherry pie and I am researching a good chocolate cream or grasshopper pie:) Any favorite pie recipes you'd suggest?

  4. So sweet to see Kate and her Dad in the kitchen together! My girls love to bake as well and we always have fun baking together. I'm glad the pies were yummy. Our very favorite pie to make in the Summer ( we make it quite often) is the Barefoot Contessa's frozen key lime pie. It is sooooo good! You can go to food network to find the recipe. If you can't find it just let me know. I know you guys have some food allergies but it might work or you might be able to improvise. Enjoy the rest of the weekend!

  5. How adorable! What a nice way for your Kate Bedelia to spend time with her daddy. Maybe Dave would write a post for us about making a pie crust. Do I see him using butter? My favorite pie is strawberry rhubarb, hands down.

  7. There's a peanut butter pie recipe on allrecipes.com that is SO easy and so delish. I always drizzle a little bit of homemade chocolate sauce over it and it's perfection! Also, my goal this week is to make the strawberry pie that was in this month's Cooks Illustrated. It looks awesome!!

  9. I would suggest peach pie and it's a shame you don't live close by because I could supply you (and the free world) with peaches.
    Kate is a girl after my own heart, apple pie is my favorite, but I prefere a Dutch Apple pie. The kind withthe crumb topping.

  10. I love The Pioneer Woman. She has good recipes, and she is so funny. I know she has good recipes for Key Lime, Grasshopper, and French Silk Pie.

  14. There is nothing as good as a homemade pie! They look so adorable together -- bet it was a blast!

    I love pumpkin pie, but it's not exactly the season for that! When we lived out in Phila, we went to Lancaster and had Shoofly Pie -- sounds so crazy, but it was good though have no idea how to make it.

  16. We are BIG pie family too! One of my quick favorites is an egg custard. I have a recipe under cooking on my blog but there are tons online too. Just so simple but sooo good. Though as I type that I remember that Harry can't eat eggs. Another favorite is sweet potato pie. Very easy too and soooo yummy. Ooooh and strawberry rhubarb. And blueberry. Clearly I really really love pie!

  18. What fun! I loved Amelia Bedelia as a kid! We have been taking Lillie to the library quite a bit lately and I had forgotten all about those books. We will have to check one out next time. Kate looks so adorable helping her dad! And by the way, your kitchen is gorgeous - do you have any more photos of it in another post?

  21. Love me some pie. Your little pie maker is too cute!

    Here is a great chocolate cream pie from Southern Living. People always ask me to bring it to food related gatherings. :)

    1 1/4 cups sugar
    1/2 cup all purpose flour
    1/4 cup cocoa
    dash of salt
    4 egg yolks
    2 cups of milk
    1/4 cup of butter (real butter works best)
    1 teaspoon vanilla
    Combine first 4 ingredients in a saucepan & set aside. Combine eggs & milk; stir into sugar mixture. Add butter. Cook over medium heart until mixture thickens and boils. Remove from heat and stir in vanilla. Spoon into pie crust. Spread meringue over hot filling sealing to edge of pastry shell. Bake for 25 to 28 minutes. Yield: One super yummy pie.
    I often use evaporated milk in place of regular milk.
    Lemon pie is my favorite.

  22. Love the photos and a lovely idea! I couldnt help but notice that you have a marble slab on your kitchen top. I am currently looking at redoing my bathrooms and am wondering about having marble on the vanity top. Would appreciate any ideas you have re bathrooms as Im feeling a bit overwhelmed with whether to go a more white scheme or have a dark colour tile on the floor as well?? Love reading your blog thanks!
