If you have read this blog much, you know that I am kind of a health food fanatic. My kids tell everyone who will listen that "our Mom only lets us eat healthy, organic food except for Lay's potato chips:)" That is not entirely true, but for some reason I was remembering a summer treat from my childhood~waffles and ice cream! As a child, we would get them on the boardwalk at the Jersey shore...YUMMY! I can actually smell them as I type this and I have not had one in at least 25 years!
So this morning for breakfast, I let Kate have a waffle with fresh berries and whipped cream (yes, organic whipped cream:).
P.S. I did find a recipe for dairy free, gluten free whipped cream that I plan on making for the boys. It requires more advanced notice (to refrigerate full fat coconut milk for 24 hours) but they will indulge this weekend!

WOW!! i was just telling my girls about the block of ice cream slapped between 2 waffles covered in powdered sugar. I grew up in South Jersey aNd my Dad's first stop on the Boardwalk was for this wonderful treat!! Yummy!
