As I sit here on this brisk Saturday morning making my grocery list for the week, I find myself wanting to make soup. Several of you mentioned soups and stews in your comments as something you crave when it is cold (aside from all the chocolate). So, I got to thinking...why don't we share our favorite soup recipes? I have already shared my favorite soup recipe here. But I will share another favorite today. I have never used Mr. Linky before so I hope you will all participate.

Chicken and Orzo Vegetable Soup

7 cups chicken stock

6 minced garlic cloves

2 medium carrots, diced

2 medium parsnips, diced

2 medium celery stalks , diced

1 medium onion, diced

3 tbs fresh lemon juice

10 ounces orzo pasta

1 lb boneless, skinless chicken breast cut into small strips.

2 plum tomatoes, seeded and diced

1/4 cup fresh dill (or 3/4 tbs dried)

1/4 flat leaf parsley

1/4 cup regular parsley

1/4 cup fresh mint

salt and pepper to taste

In a large stockpot combine chicken stock, garlic,carrots, parsnips, celery and onion. Bring to a boil over high heat. Reduce heat and simmer for about 15 minutes. Turn heat back to high and add lemon juice and orzo, cook 3 minutes. Add chicken and cook until chicken is cooked through and pasta is cooked (about 8 minutes). Remove from heat and add in remaining ingredients.

NOTE: I made this tonight and used gluten free pasta. We also grilled the chicken breasts (2), diced them and added it to the soup at the last minute. If you use GF pasta, increase the chicken stock to 8 cups:) It was delicious. Everyone loved it (even Harry and he despises all soups). I will add though that while I LOVE the dill, my boys prefer it without dill.

My friend, Kristin used to make this for me and she gave me the recipe. In fact, the first time she made it for me was when Will was born 12 and 1/2 years ago. I don't make it often because orzo is not gluten free. But I think I will try to substitute rice or another gf pasta soon. It is so good!!!! The fresh dill makes this soup.

    I've just eaten my lunch (ham rolls and a banana) but now you've made me want soup!
    That does look delicious.

    How is your juicing going? I took a break for a few weeks because i thought i might have been eating too many carrots!

  2. Helen...that onion soup look delicious! Thank you for linking to it. I took a break from juicing too. I am ashamed to say that my break was out of pure laziness but I bought some organic ingredients to juice this weekend:)

    It is important to alter the the juicing ingredients from what I have read. Happy New Year!

  4. Haha my break also ended up being due to extreme laze. I was going to stop just for a week, but it ended up being about 3 months :-S

    Had a good old carrot brocolli and apple one yesterday though!

  8. Since kevin is the cook in my family, I dont have any great things to share but he makes amazing soups all the time. Tonight we are having a new pumpkin soup he has not tried-- looks really good. We eat soup all the time because the kids love it!!!

  9. Great post idea with all the soup recipes. I will certainly be trying yours. I already have made the tortilla soup (both yours and others) many times!
    I posted a recipe for white bean chili that my family loves and I can eat it also!
    Today for lunch, I had the V8 tomato herb (something like that?) in a carton. Not home made, but it was delish! No fat and low calories/carbs :)

    And ... I keep forgetting to ask you. Did you get your gift (winning) from my Kate Lander's giveaway?? What did you chose??

  13. Oh yeah....Sara's Chicken Tortilla Soup is awesome....I make it all the time! I love soup but my family doesn't like it...that's okay..more for me! Great idea!

  19. It's been so cold here in Connecticut that I've made several batches of soup for dinner over the past few weeks. The best part is that I take it for lunch the next day.   21. I'm so glad you did these links to SOUPS! I think soups are highly under rated! Piping hot delicious soup, a home made loaf of freshly ground whole wheat honey bread.... ahhhhh. Toss in a cozy fire and impending snowfall viola! - a dream meal for a dreamy evening!

  27. This has most definitely been the "winter of soups" for my family. I almost always have one in the fridge ready to heat up!

    So, I had to let you know that I made your favorite tortilla soup and Adam LOVED it! I think I have that cookbook around here somewhere but I've never made that recipe- thank you!
