The Perfect Fall Soup

I have posted about this soup a few times before.  But it is so delicious and everyone who makes it, LOVES it.  Kids really like it too.  I could not be easier to make.

Tortilla Soup (from Stop and Smell the Rosemary)

6 tbs vegetable oil
8 corn tortillas, chopped
6 cloves garlic, minced
1/2 cup chopped cilantro
1 medium onion, chopped (I do this in the food processor)
1  28oz can diced tomatoes
2 tbs ground cumin
1 tbs chili powder
3 bay leaves
6 cups chicken stock (I buy low salt organic)
1 teaspoon salt
1/2 teaspoon cayenne pepper (I leave this out if the kids are eating it and Dave, Harry and I add Tabasco at the table)
4 cooked chicken breasts, shredded or cubed ( I bake them, let them cool and shred/pull them with clean hands.)

Optional garnishes:
Shredded Monterey Jack cheese
cubed avocado
Sour Cream
2 corn tortillas, sliced and fried crisp (or a few tortilla chips) 

Heat the oil in a large pot over medium heat.  Add tortilla, garlic, cilantro and onion. Saute 2-3 minutes.  Stir in tomatoes.  Bring to a boil and add cumin, chili powder, bay leaves and chicken stock.  Return to a boil.  Reduce heat.  Add salt and cayenne.  Simmer 30 minutes. Remove the bay leaves and stir in the chicken. Reheat for a few minutes.  Spoon into bowls and garnish with cheese, avacado, sour cream and/or tortilla chips.

  2. I will be the first to agree here that this soup is the bomb! I think I printed off the recipe when you posted it a couple of years ago and it is in our regular rotation during the fall/winter soup season! Truly the best tortilla soup I've ever made, probably that I've ever eaten!

I was scrolling thru OLD POST trying to find this recipe and remembered we can CONTACT YOU VIA EMAIL (well...It may not have been meant for that...but THESE COOL DAYS GOT ME KINDA GIDDY!!! I printed it out last year intending on making it and LOST THE WHOLE RECIPE!! Ha!! Not this year!! THANK YOU SOOOO MUCH!!!



    Also, I listen to the program last night via my phone!! LOVE! LOVE! LOVED IT!!! You have a great speaking voice!! Looking forward to the new ventures you have planned!!!

  10. This sounds like a very yummy soup. Have you ever made it without the chicken? I am wondering if it would be to thin without. I am having dietary challenges lately and meat and dairy are on the do not eat list. I am rapidly becoming bored with veggies and pasta or rice.

    I love the new blog look and I am so excited for you and your new endeavors.

    1. I have not make it without the chicken but I would add rinsed black beans as a substitute. I think that would be delicious. Let me know if you try that and thank you for the kind encouragement.

  11. We tried the soup and loved it! It was nice to try something new. Super easy and fun for Hannah too. Hannah vote it a 1000, so we will be making it again. She gives me the thumbs up or down everytime I try something new. Thanks for sharing.
