Family Meal Planning

A really good friend of mine recently asked how much we spend a month on groceries.  She was shocked and in disbelief at the low number.  In fact, she thought that I could not possibly be correct.  In light of our way of eating (some organic and gluten free), she assumed we spent a lot more.

After talking about it, my friend and I realized that the reason we don't spend as much is the planning. After asking around, I learned that many of my friends don't have a weekly menu plan.  They run to the grocery store (often whole foods because it is the closest) and buy their ingredients daily or a few times a week.  I could never do that.  It seems so time consuming and stressful to me. But maybe some people like the grocery store (like my friend Shana!)

Dave (awesome husband) does our grocery shopping.  I typically plan our meals for the week and write the list. He does our shopping for a few reasons.  It kinda started back when I was in a car accident and getting acupuncture/chiropractics and was told "no lifting."  But honestly, I hate grocery shopping and Dave sticks to the list.  If I go (which I do sometimes), I throw in all sorts of treats we don't need and waste money and food. Plus, did I mention that I hate grocery shopping and he's the best husband?

So, when I sit down to make the list each Saturday or Sunday, I have a few methods.  First, I look at our week to see what we have going on.  For example a few nights a week, we are not all home at the same time.  Kate has gymnastics, Will has water polo or ACT class or work or friends, Harry has lacrosse, I have clients or book club, etc. On those nights when we all need to eat but at different times, I typically make something like a lasagna or chili or stew or something in the crockpot. Most of those meals make enough for 2 dinners so we eat leftovers the second night. That way, there is something simmering on the stove and people can eat as they get home.  Or they can warm it up easily in the microwave. Dave and I usually eat together with whomever is home around 6 or 6:30 (Harry and sometimes Will) and then serve the others as they get home.  Kate doesn't get home from the gym until 8:50 so she eats a small late dinner a few times a week. I really hate that.

Until this year, we ate as a family almost every single night.  That was HUGELY important to me.  There are tons of studies on family dinners and the benefits to families. And for 17.5 years of parenting, we were able to do it.  Unfortunately (but fortunately for her), last month Kate was moved up a level in gymnastics and now she gets home too late 2 nights a week for us to eat together.  But we really try to do so the other nights as best we can.

At least three/four nights a week we eat together at home (some of the other nights, we eat out as a family too).  On those nights that we are all home, I typically plan things that should be eaten right away such as grilled meats and veggies.  For example, this week, I will make the pork tenderloin on a night we are all home to eat together and the slow cooker meal on a night when our dinners are staggered. Make sense?

Typically, we plan the meals but not the exact nights. So I have meals I make on gymnastics nights and meals I make on non gym nights but I don't always plan which exact one I will make when.  We probably should do that but I like to be a little flexible.  Sometimes we are craving meat or pasta.  Our weather fluctuates so much this time of year (freezing one day and gorgeous the next) that we might want a salad one day and stew the next.  So, we have an idea of what we are making but we decide the days as they come that week.  Plus, plans are always changing with teenagers and an 8 year old.  And I hate when I make a big meal and no one is home to eat it.

Dave used to cook about 50% of the time (when we lived in VA 6-10 years ago).  Dave is a really good cook. Now he works later and so I typically cook during the week. He will sometimes do a quick weeknight dinner of tacos or sautéed fish if he gets home at a good time. And he typically cleans up on the nights I cook.

Usually, Dave cooks a big and delicious Sunday dinner for our whole family.  Sunday night dinner is kind of non negotiable in our family.  I want everyone home.  Friends are welcome but I want my kids home.  In fact, we have sometimes opted out of games, parties and practices on Sunday night because I strongly believe that is family time.

How do I decide on the meals? Some weeks, I ask the kids and Dave if there is anything they especially want me to cook.  I am  also a big fan of cookbooks and pinterest.  Some weeks, we stick to the things we have been making for years (tacos, pasta with sundried tomatoes and grilled chicken, lemon pepper shrimp, roasted chicken, gluten free pasta with sausage and meatballs, etc).  Some weeks, I am adventurous and find new recipes to tackle.  I use Pinterest and cooking blogs a lot.  Pioneer Woman never lets me down.  EVERY SINGLE recipe is good (although I sometimes adapt them to make them gluten free or use more fresh ingredients).  Ina Garten is another favorite as well as Giada, Two Peas and their Pod and Skinnytaste.  I also try to plan by varying the kinds of meats (pork, turkey, chicken, red meat and fish) and including one meatless night but the teenage boys rebel so I have to be sneaky about that.  We choose about 4 meals per week counting on leftovers for one or two and eating out once a week.  Once in a while, we have grilled cheese and avocado sandwiches or hot dogs (GASP!) or pizza or Chinese food.

So, this is our meal plan for the upcoming week:

Honey Butter Pork Tenderloin
Slaw Salad
Baked Sweet Potatoes

Note ~ If I make this again, (which I probably will because the flavor is great) I will make on stovetop so the chicken stays crispy. The crockpot was an added unnecessary step in my opinion.  Also, you MUST double the sauce or it will burn/stick in the crockpot.  Luckily, I did this.

Dave will also cook a Sunday meal tomorrow. I just don't know what it is yet:) Often he grills or cooks ribs or steaks or fish or beef braise with veggies and sides. The boys are meat eaters for sure.

Added: Dave slow smoked ribs on the grill. They were delicious!!!  He also made sweet potato fries and a wedge salad.

Last week we had:

Lasagna (I use fresh bulk Italian Sausage and gluten free noodles and freshly shredded Parmesan to lessen a little of the processed foods)  This makes enough for our family for 2+ dinners and everyone LOVES it!

(This was really good but TOO spicy for Kate and some others).  I used half the creole seasoning and we like spicy foods.  I am thinking our  andouille sausage was also very spicy)  I will make it again but adapt for the spiciness. This also made enough for 2 meals for our family.  Maybe I doubled the recipe…not sure?

*This last meal was in the plan but because of a few missing ingredients and a change in plans, I had to punt.  I ended up making buffalo chicken thighs that I kind of made up on the fly in the crockpot.  They were surprisingly good.  I will make these properly very soon though as they look delicious and easy and the reviews are excellent.

I am not a meal planning expert at all, this is just what works for us and I thought it might help others too. Thank you for all the kind comments on my last post. It is one of my favorite posts because I can clearly see how far God has brought Will. I do want to tell y'all a little more...

That year was one of the hardest years for us as a couple... Dave's Mom was diagnosed with cancer the week (actually the day) Will was born. She died when Will was 8 weeks old and about the time we were finding out about his surgery. I had been a professor and was on leave but had to decide if/when to return to my career. Dave needed back surgery and had it 2 weeks after Will's head surgery. We were newlyweds as we had only been married about 2 years. And in hindsight, I probably had a case of the baby blues that year. I did not see a doctor but I know I was in a sad sort of funk. I was losing myself. You know what got us through all of that?

Certainly a lot of prayer but also, A Gratitude Journal. I had just seen it on Oprah one day and I immediately found a steno book and started writing down 5 things every day that I was grateful for. I asked Dave to do the same. Reading each other's lists opened up some topics of communication for us. And I got to see how grateful Dave was for me and vice versa. In a year filled with death, serious illness, surgeries and depression, we made efforts to focus on all the good things in our lives. Our marriage was so close during that time. I attribute a lot of that to our journal. I still have it.

There were days when there was little to write. For example, I am grateful I got the laundry done today. But by focusing on our blessings, we got through a tough time. I would highly recommend this to anyone who is in a rough patch. You will be amazed at how simply yet powerful it can be. And you must write it down....just thinking about it is not quite as effective.

And this story becomes more amazing. Will was NOT pleased that I posted about his struggles. he is a middle schooler and was feeling a little exposed. I get it. However, I relayed to him how many people it helped. Several people e-mailed me saying it was exactly what they needed to hear this week as they were struggling with something similar in their own lives. AND.....

This morning my dear friend, Diana e-mailed me asking our family to sponsor Baby Ciera. We have been sponsoring a child through Pearl River Outreach but thankfully our girls keep getting adopted:) So, it was time to choose a new one. I saw the list last week but could not decide. Today, Diana tells me that Baby Ciera was born on June 22nd (Will's birthday) and her special need is a protruding head on the back right side! Will's head protruded on the left but still the similarities astounded me. I about fell off my chair. Diana had not read my post about Will and she does not know his birthday. I am sure that God sent little Ciera's file right to our family to sponsor. So, meet our adorable little Bamboo Baby Ciera....

I am so excited to go see The Blindside tonight with a friend. Harry has strep throat so I didn't think I was going to be able to go but Dave is going to takeover so I can go. And I am trying really hard to stick to our healthy menus each week. I did not cook for the 2 weeks I was sick so I am trying to get back on track. If I post our menu, I am so much more accountable to not only buy the ingredients but to actually cook the meals as well. So, here is our menu for the week.

Grilled rib eyes (grilled portobello for me), baked sweet potatoes, grilled asparagus.

Gluten Free Pasta Fagioli Soup (crockpot)

Chicken Stir Fry over rice

Lemon, Garlic & Pepper Shrimp over gluten free pasta (recipe follows)

That should get us to Thanksgiving:)

Lemon , Garlic & Pepper Shrimp

1 pound of shrimp , peeled and deveined

2 tablespoons Lemon, garlic and Pepper Seasoning

2 tablespoons Olive Oil

1 Leek, finely sliced, Discard upper greens (I often used green onions instead)

2 cups uncooked spinach, sliced into strips

4 Italian plum tomatoes

1/4 cup dry white wine (or whatever white you have on hand)

1 tablespoon lemon juice

Angel hair pasta (we use gluten free pasta)

Toss shrimp with 1 tablespoon of the seasoning. Preheat a 2 quart saute pan on medium heat. When rim is hot to the touch, add olive oil and heat an additional minute. Saute' leeks about 1 minute, add spinach and continue to saute' for 1 minute. Add shrimp and tomatoes and saute until the shrimp just begin to turn pink. Add remaining seasoning, white wine and lemon juice and cook for 2-3 more minutes (until shrimp are pink throughout). Serve over angel hair pasta.

I have been making this recipe since Dave and I were first married and we all LOVE it. So easy, healthy and delicious!

I go in and out of cooking phases. Some weeks I get in slumps and we eat out a lot or have lots of salad with grilled chicken and/or taco nights. Lately though, I am really enjoying cooking again. It might be due to the fact that I have a mother's helper a few afternoons a week to help me juggle homework, school pick-ups and dinner time:) The extra set of hands at that time of day, really makes a difference. Anyway, I love when people post their recipes and menus as it inspires me to try new things. So, here is what is on the menu at the House of Peanuts this week:

Pumpkin Soup~ I made a HUGE pot. Dave and I had it for lunch today and I froze the rest in individual servings for lunches for us throughout the fall. I loved it. Dave thought it was okay but he is not a pureed soup lover like I am. The kids cannot eat this because of the dairy and it is a little spicy. But it would make a GREAT dinner (with salad and bread) for adults and you would have leftovers.

Roasted Chicken with sauteed spinach and garlic and mashed red potatoes (the potatoes are adapted from this book which I LOVE and found at Target!).

Beef Stew~ I adapt it slightly to make it gluten-free but it is from the old Better Home and Gardens red plaid cookbook. The recipe in the book is different from the recipe on-line. Simple and delicious, it is a winter staple in our house. I serve it over gluten free noodles. My grandma used to make us beef goulash over wide noodles as a child so I always like stew over buttered noodles. If you want the recipe, I will post it.

Savory Shrimp with Tomatoes and Avocados~we had this tonight. Here is the recipe. (Sorry to post 2 shrimp recipes in a row. We don't eat shrimp that often (about once a month). I just happened to try two new shrimp recipes recently.

Savory Shrimp with Tomatoes and Avocados

2 tablespoons of butter

4 tablespoons of olive oil

5 cloves of garlic, minced

1 and 1/2 pounds shrimp, peeled and devined

1/4 cup white wine (I would increase this slightly next time) Most white wines are Gluten free.

1 cup cherry tomatoes halved (mine were so big, I quartered them)

1 tablespoon fresh basil

1 tablespoon fresh oregano

1 tablespoon fresh Italian flat leaf parsley

coarse salt and ground pepper

1 avocado pitted, peeled and diced

2 cups of rice cooked

Melt the butter in a large saute pan over medium heat; add the olive oil. Saute the garlic for one minute, add the shrimp. Saute the shrimp until pink. Add the wine, tomatoes and herbs, and season with salt and pepper. Remove from heat and gently stir in the avocados. Serve over rice. From Peace Meals. Serves 4 (or our family of 5).

I made this tonight and it was easy and delicious. The herbs were fresh from our garden (which is really just random herbs that Dave planted in our flower beds:) This meal was so quick, easy and healthy too. I put the rice in the rice cooker and when it was just about done, I started the shrimp. I will make this again for an easy weeknight meal. Even Kate LOVED it (especially the shrimp!)

Updated: Okay several of you e-mailed or commented and asked for the tortilla soup recipe...I added it at the bottom.  Don't let the long ingredient list scare you.  It is easy peasy.

Ever since they cooked at school the other day (a few posts down), Kate wants to cook at every meal.  The other day she begged to make scrambled eggs with cheese.  We cracked eggs, whisked, cooked and then she refused to eat them.  This morning she made pancakes for the boys (and their friends who slept over).  BIG lesson learned-- NEVER have a sleep over when you are only 1/2 unpacked! I felt the boys needed it but it was complete chaos.

Really though this post is about our menu this week.  Over the past few months several people have asked for recipes and menu ideas for eating the way we do (gluten free and minimal dairy). A few bloggers post weekly menus and I know I will not be able to keep up with that. However,  since I actually made a menu this week, I thought I'd share it.  

Also, I briefly mentioned Harry's health problems last week.  Well, they were diet related.  We were not eating very healthy for the past few months.  We ate out a lot and did not have our cookbooks or pots and pans or spices. Also, Harry was going to a lot of friends houses and sleepovers and "cheating" on his diet.  As a result, Harry was having some severe stomach issues.  So, I really need to get back on track with cooking gluten-free and dairy free foods for our family.  Here is this week's menu:

Sunday-Lime and Cilantro Shrimp over long grain rice. (From Peace Meals-the new and FABULOUS Houston Junior League cookbook).  We had this for the first time tonight.  It was SO easy and delicious!

Monday-Chili (beef and kidney bean).  My favorite chili is from my old red and white cover Better Homes and Gardens Cookbook but it is not on their website. Even my friends who don't like chili like this one.  I will post it sometime but I am a terrible typist so it takes me a long time to post recipes.

Tuesday- Cherry Chicken  This is a crock pot recipe that is from Preppy Pink Crocodile.  It sounds easy and yummy!

Wednesday-Smooth Black Bean soup from my all time favorite cookbook Stop and Smell the Rosemary (another Houston Junior League cookbook). No, I am not a Junoir Leaguer but every single recipe in this cookbook is delicious.  It has won numerous national awards. My copy is literally falling apart!)

Thursday- Chicken Tortilla Soup (again from Stop and Smell the Rosemary). This is the best tortilla soup you will ever eat.

Friday- Leftovers because I have late afternoon parent-teacher conferences (and the two soup recipes make a lot of food).

I recently found this site called A Year of Crockpotting

She posts a gluten-free crock pot recipe and review every single day!  I am thinking this is a great site for our family.

Tortilla Soup (from Stop and Smell the Rosemary)

6 tbs vegetable oil

8 corn tortillas, chopped

6 cloves garlic, minced

1/2 cup chopped cilantro

1 medium onion, chopped (I do this in the food processor)

1  28oz can diced tomatoes

2 tbs ground cumin

1 tbs chili powder

3 bay leaves

6 cups chicken stock (I buy low salt organic)

1 teaspoon salt

1/2 teaspoon cayenne pepper (I leave this out if the kids are eating it and Dave, Harry and I add Tabasco at the table)

4-6 cooked chicken breasts, shredded or cubed (I use 4 and I bake them and then shred them with two forks. Really, 4 is plenty of chicken).

Optional garnishes:

Shredded Monterey Jack cheese

cubed avocado

Sour Cream

2 corn tortillas, sliced and fried crisp (or a few tortilla chips) 

Heat the oil in a large pot over medium heat.  Add tortilla, garlic, cilantro and onion. Saute 2-3 minutes.  Stir in tomatoes.  Bring to a boil and add cumin, chili powder, bay leaves and chicken stock.  Return to a boil.  Reduce heat.  Add salt and cayenne.  Simmer 30 minutes. Remove the bay leaves and stir in the chicken. Reheat for a few minutes.  Spoon into bowls and garnish with cheese, avacado, sour cream and/or tortilla chips.
